RECIPE - AFTERNOON TEA COCKTAIL

Shake up this Earl Grey cocktail and serve in pretty tea cups and saucers for the perfect afternoon pick me up.

Ingredients

50ml Gin

35ml Strong cold Earl Grey tea

20ml Lemon juice

12.5ml Agave syrup

½ Egg white

Lemon peel, to garnish

Lavender sprig for decoration

Method

  • Brew a pot of Earl Grey tea in advance and leave to cool.

  • Freshly squeeze the juice of a lemon.

  • Separate the white from an egg and set half aside.

  • Pour gin, Earl Grey tea, lemon juice, Agave syrup and egg white into your cocktail shaker and give it a good shake.

  • Strain the cocktail into a tea cup and garnish with lemon peel and a sprig of lavender to serve.
