QUICK & EASY MUG CAKE
Me and my girls love going to a cafe and having a treat. Although I do feel it’s my civic duty to eat my way around all the local cafes in East London, it does get expensive. It’s also tiring trying to get a 4 year old and 2 year old to behave and not waste another sodding babycino that they asked for but now don’t want. So making a treat at home can be a great alternative. I really enjoy baking when I have the time and now my girls are both at the age they can help me it can be quite fun to make something with them. Although being asked every 2 minutes when will it be ready can be exhausting on top of all the mess and washing up.
So today after school I decided we would make chocolate mug cakes, a bit of an activity followed by a treat, win win! What’s great about this recipe is that it’s easy for the girls to measure out as it’s all based on tablespoons and it only makes a small amount of cake.
The recipe I found suggests using the largest mug you have. I used 2 of my standard sized mugs as there was no way these 2 were going to share a cake without a fight.

Measure out the dry ingredients - 4 tbsp self raising flour, 4 tbsp sugar and 2 tbsp cocoa powder - and mix together. To make the mixing easier for the girls I used a measuring jug, this also made it easier for me to pour into 2 separate mugs. Then mix in the egg. The mixture will be quite lumpy at the this stage so don’t worry.
Add 3 tbsp milk and 3 tbsp oil and mix until the cake batter is smooth. Then add any extra fillings you want, we had a packet of chocolate buttons which the girls were very excited about. Pour the batter into your chosen mug(s). You could also divide into espresso cups to make mini cakes. Then pop your mug into the microwave and ping for 1-2 minutes. There’s a bit of trial and error with the timings. I did a minute for each mug.
As you can see the cake went down really well! You could serve with a scoop of ice-cream or a splash of double cream to make it more indulgent. Enjoy!
