RECIPE - BANANA PANCAKES
Pancake day is only a week away (Tuesday 16 February 2021). My girls love pancakes, actually any form of carbs to be honest, so when I’m feeling energetic in the morning I make banana pancakes. As they’re naturally sweet they don’t need any extra sugar, although I usually pour some sort of syrup on mine!
Ingredients
3 Ripe bananas
150g Self raising flour
2 Eggs
Splash of milk
Yogurt, fruit and syrup of your choice
Preheat oven to a low heat
Mash the bananas and whisk in the eggs, then slowly add the flour. For ease I use a stick blender to combine all the ingredients.
If the batter is too thick loosen with a splash of milk.
Heat a frying pan with some flavourless oil.
Using a ladle pour in some batter.
The batter is a bit thicker than regular pancake batter so form a thicker pancake.
When bubbles start to form on the edge of the pancake flip it over.
Once cooked place in the oven to keep warm while you carry on.
Top pancakes with yogurt, fruit and serve.
