RECIPE - BANANA PANCAKES

Pancake day is only a week away (Tuesday 16 February 2021). My girls love pancakes, actually any form of carbs to be honest, so when I’m feeling energetic in the morning I make banana pancakes. As they’re naturally sweet they don’t need any extra sugar, although I usually pour some sort of syrup on mine!

 

Ingredients

3 Ripe bananas

150g Self raising flour

2 Eggs

Splash of milk

Yogurt, fruit and syrup of your choice

Preheat oven to a low heat

  • Mash the bananas and whisk in the eggs, then slowly add the flour. For ease I use a stick blender to combine all the ingredients.

  • If the batter is too thick loosen with a splash of milk.

  • Heat a frying pan with some flavourless oil.

  • Using a ladle pour in some batter.

  • The batter is a bit thicker than regular pancake batter so form a thicker pancake.

  • When bubbles start to form on the edge of the pancake flip it over.

  • Once cooked place in the oven to keep warm while you carry on.
